Coconut & Berry Pancakes

METHOD

1 ½ cup (225g) self raising flour, sifted

¼ tsp bicarbonate soda

¼ cup (50g) caster sugar

½ cup (35g) shredded coconut

375mL can CARNATION Light & Creamy Coconut Flavoured Evaporated Milk

1 egg

 

INGREDIENTS

1. Combine flour, bicarbonate soda, sugar and shredded coconut in a bowl.

2. In a separate bowl, combine CARNATION Light & Creamy Coconut Flavoured Evaporated Milk and egg. Stir into flour mixture.

3. Heat a pan, lightly spray with oil. Pour ¼ cup batter into pan. Cook 2 minutes over low heat or until bubbles form on the surface, turn and cook for a further 1 to 2 minutes or until cooked thought.

Tip – serve with mixed berries, ricotta and honey, if desired.
